How could I modify my family's fudge recipe for my Vegan Girl-friend and still have it be palatable?
My family has a delicious fudge recipe but it's not vegan (by any means). My girlfriend is vegan...*sigh*...
here's the recipe, any thoughts would be welcomed:
2 cups sugar
2 large tablespoons cocoa
1 cup milk
1 tsp vanilla extract
3-4 tbsp butter
mix the sugar and cocoa to get the lumps out
add the milk
bring to a boil and then simmer until it's goey (hardens in a class of cold water)
take it off the heat, add the vanilla and butter and beat it until it's about to harden in the pan, pour it onto a buttered plate, and then fight over who gets to lick the spoon.
it's super good, but it's super not-vegan...any suggestions?
I agree that you can use Earth Balance as a substitute for the butter (some margarines have milk fat or other animal ingredients) and you can use soymilk in the same proportion as the milk. If you don't like soymilk, there is also oat milk, almond milk, and rice milk. For sweets, almond milk and oat milk taste best.
