I see there has been previous questions about this but it seems everyone does it different. I want to the know the proper way to do it. Please send any sites where you find the answer. Thanks!
You see different answers because everyone has different preferences.
I'm not a salt fanatic, so the 1 hole gets the salt.
I love pepper, so the 3 holes get the pepper.
Actually, I use mills for both.

A Guide to Salt and Pepper Mills
Salt and pepper mills are utilized in households and dining establishments throughout the country, but just how much do you know about salt and pepper mills?
Interesting Facts About Salt and Pepper Mills
According to Wikipedia, salt and pepper mills date back to the Peugeot family who started manufacturing grinders way back in 1842.
A lot of pepper and salt grinders are similar to coffee mills, but as opposed to making use of a handle, the top rotates to grind the appropriate quantity of spice or salt. The ground up ingredient is subsequently sprinkled directly on the food. Certain mills, on the other hand, do not rotate, but use two abrasive surfaces to grind the salt or pepper.
Electric powered salt and pepper mills may be driven with either a battery or electricity. Electric pepper and salt mills are significantly more productive than manual grinders, however the spices can become heated due to the modest amount of friction.
Guidelines for Using Salt and Pepper Grinders
1. Use pepper routinely to keep it from getting stale too easily.
2. To help keep peppercorns fresh, keep them in an airtight container away from the sun.
3. Clean the grinder part of the mill using a compact brush or toothbrush and rubbing alcohol or possibly even window cleaner.
4. Never place the mill in water unless the instructions state otherwise.
5. Grinders can be fine-tuned with a screw or mechanism to produce more coarse or extra fine grinds according to your personal preference. To get a finer grind, it helps to take the peppercorns out of the mechanisms prior to grinding.
6. Never put damp salt into a salt mill because the grinder will clog up.
As described below, it is important to never place salt into a pepper mill (unless it is among the grinding mechanisms listed below) because it will easily corrode steel and various other materials.
Varieties of Grinding Mechanisms
You can find many types of salt and pepper milling mechanisms and distinct advantages to each kind. Ceramic can be an exceptional multiple use grinder that does not corrode and is excellent for grinding both salt and pepper (in addition to spices). Acrylic is usually an economical option that is remarkably long lasting and perfect for grinding salt as well as other spices. Probably the most prevalent grinding mechanisms is made of zinc alloy, which can be resistant to corrosion. While zinc alloy is actually perfect for grinding pepper, it is not ideal for milling salt.
One particular alternative is stainless steel, which can be the most long lasting option and is a top choice of professional chefs across the globe. Nevertheless, while this alternative performs nicely for grinding pepper, it isn't advised for grinding salt. Carbon steel is another extra-durable metal that provides the quickest grinding and is in addition preferred by professional chefs. Similar to stainless steel, carbon steel isn't intended to use for grinding salt.
